Spinach Omelette with Avocado (#6 Members Meals)

When former England Rugby player Tom Johnson heard about our members meals he was keen to join in.


Tom recommended a recipe that he shares with clients at www.tomjohnsonlifetsyle.wordpress.com for our members to try.

Ingredients:


3 large eggs

30g egg whites (2 table spoons)

1/2 cup of baby spinach

1/4 avocado sliced

1 teaspoon of olive oil used for cooking

salt and pepper for taste


Method:


1 Heat olive oil is skillet or frying pan

2 Add in spinach and saute until wilted. Once wilted remove from pan

3 Whisk the eggs and egg whites in a bowl and add salt and pepper to season

4 Pour the egg mixture into the pan, tilting it to make sure it spreads evenly

5 Cook for 2 - 3 minutes or until the edges start to set

6 Add the sauted spinach to one half of the omelette in the pan

7 Fold the omelette over so the spinach is in the middle and cook for another 1 - 2 minutes until fully set

8 Put omelette on to a plate and serve with the slice avocado



Personally spinach and avocado are two of my favourites and combined with egg this is a real winner for me.
