Meal provided by Sarah Morris, a keen chef who looks to find ways to balance taste and nutrients on a low budget.
This one seems to score highly on all fronts.
Serves 4

Prep time : 20 minutes
500g of 5% fat Pork Mince
1 medium-sized Onion, finely diced
2 Carrots, peeled, chopped, finely
1 medium Leek, washed, finely sliced
2 sticks Celery, chopped finely
1 small Eating Apple, peeled, cored, finely diced
140g frozen cubed Butternut Squash
2 small Maris Piper Potatoes
1 heaped teaspoon frozen Garlic
1 heaped teaspoon frozen Ginger
1 Teaspoon Ground Cumin
1 Teaspoon Ground Cinnamon
2 Teaspoons Ground Coriander
1 Tablespoon concentrated Tomato Puree
Chicken stock cube
500mls Boiling Water
5 small rounds of Frozen Spinach (equivalent to half a bag of fresh)
Juice of half a Lemon
2 Teaspoons Thyme
1 Tablespoon Brown Sugar
Salt and Ground Black Pepper
Olive oil to cook
Method
1. Prepare all vegetables before you begin.
2. Heat oil, medium heat, in a large deep-sided saucepan.
3. Sauté onions for 3 minutes, add ginger and garlic for the final minute.
4. Add minced pork and cook until brown for 5 minutes.
5. Season and add cumin, coriander, and cinnamon in the last minute to cook out.
6. Now put in the carrots, celery and apple cook, out a further 2 minutes.
7. Add the potato, leek and butternut squash, stir well and bring up to temperature, takes around 4 minutes.
8. Stir in the tomato puree and add chicken stock cube and water, return to the boil, stirring well.
9. Set a timer for 20 minutes, once boiling and simmer. Stir occasionally, hotpot will thicken with the potato.
10. Now add the spinach, lemon juice, thyme and brown sugar, stir really well and cook for a final 8 minutes.
11. Adjust the seasoning and serve.
This is a fabulously hearty meal that has every component as it says in ‘One-Pot’! Inspired by the flavours from the Middle East it combines spices from the region with other ingredients, with British ones, that are easily sourced and cheap to find. The meal makes four portions, so you can enjoy one for your dinner and then freeze the others once cool to enjoy another delicious,
