This is a money saving tip from Myra Whitney. Very importantly it avoids food waste which saves you money.
Using the already roasted vegetables left from the Sunday Roast, Myra adds some vegetable stock.
Puts it all in to one pot and blends its up until it is smooth and creamy.
Ingredients can vary every time depending on what is left over.
When Myra did this recently she included: Parsnips
Brussel Sprouts
Broccoli
Potatoes
Carrots
Vegetable Stock
