Caramelised Vegetarian Wraps (#8 Members Meals)

Caramelised Vegetarian Wrap with salad on a plate


Matt is a creative member of All 4 Inclusion and is happy to share his Caramalised Vegetarian Wraps.


Whilst it is named as a vegetarian meal if you want to add meat you can twist the recipe to your taste.


Ingredients:


1 courgette

3 peppers (red, yellow and orange is my preference)

8 button mushrooms

5 shallots

One little gem lettuce

6 cherry tomatoes

4 spring onions

Mozarello cheese

White tortilla wraps


Salt and pepper

Tiny amount of soy sauce from a bottle

Mango Chutney

Garlic Powder



Ingredients added to the frying pan


Preparation:


  1. Chop courgettes into small squares

  2. Peel and chop shallots in to small circles

  3. Chop the mushrooms or break apart making sure you remove the stem

  4. Chop the top off the peppers disacarding any seeds, slice them in to smaller pieces



Method


  1. Add all ingredients in to a frying pan and add some oil

  2. Fry ingredients until slightly browned before removing pan from heat



Nicely cooker Caramelised Vegetarian Wrap fillings in the pan

  1. Add a pinch of salt and pepper to season, one teaspoon of garlic powder, two teaspoons of mango chutney and moderate amount of soy sauce (amend amounts to your taste)

  2. Return the frying pan to the heat and fry whilst stirring. Ensure ingredients do not stick or burn. When cooked remove pan from the heat

  3. Chop tomatoes, spring onions and lettuce before adding to your plate

  4. Add the filling to your plate

  5. Grab your wraps, start filling them and have some fun food


This is a really fun, tasty dish from Matt. I love wraps, they can be messy at times, but fun also. If you want meat in every meal, why not add some chicken, beef strips or pork.
