The Wilted Spinach Omelette recipe is from Sarah Morris. Sarah is a director of All 4 Inclusion and runs the successful Wednesday night Art Group.
She is a keen cook and like many of us looks to balance nutrition on a low budget. Personally I love omelettes, then when you add spinach for texture and goodness, plus the onions soaking up all those flavours and juices from both the eggs and spinach this is a winner for me.

Wilted Spinach Omelette
Serves 1
Ingredients
For the omelette
2 eggs beaten
50mls semi-skimmed milk or milk alternative
Salt and Ground Black Pepper
Olive oil to cook
For the Spinach
100g Baby Spinach fresh washed and dried
1 Small onion, finely sliced
2 Garlic Cloves, finely sliced
Squeeze Fresh Lemon Juice
Salt and Ground Black Pepper
Freshly Grated Nutmeg or 1/8 teaspoon ground nutmeg
Olive oil to cook
Method
Set grill to a warm moderated to high heat (to finish off omelette at the end of cooking).
Prep onion, garlic and spinach. Heat a little oil in a medium pan.
Sauté onion for 5 minutes, season, add garlic for last minute then add spinach on a high heat, add lemon juice, wilt for 30 seconds add nutmeg, turn heat off, leave to cool.
Heat oil in a medium fry pan, medium heat, meanwhile, beat eggs and milk/alternative vigorously in a bowl, add seasoning, pour into frying pan.
After 20 seconds draw the mixture from the sides to the centre to allow more of the mixture to cook and then leave a minute or so, after the mixture appears to look set add spoons of the pre-cooked wilted spinach mix.
Place the pan into the pre-heated grill to continue cooking and warm through the wilted spinach. The omelette will puff up from underneath and become light and fluffy. Takes around 5 minutes.
Serve with a side salad, rice cakes or toast if you wish, your choice …
Add a glass of orange juice or a smoothie a well-balanced light meal, the juice will help absorb more of the nutrients in the meal and aid digestion and increase nutrient availability.
